Lemon Rosemary Chicken, Brussels Sprouts, & Sliced Tomatoes

Brussels sprouts...my how you have deceived me all these years! I am actually a major fan! Here's the quick and dirty on this healthy and fresh meal: 

Ingredients:
  • chicken breasts
  • olive oil
  • juice of 1/2 lemon
  • 1 tsp minced garlic
  • several fresh sprigs of rosemary
  • 1/2 tsp salt
  • 1/4 tsp pepper 
  • tomato, sliced 
  • 1 pound of Brussels sprouts, sliced in 1/2 
  • 1/2 cup of sun-dried tomatoes 

Directions: 

  1. Whisk together olive oil, lemon juice, garlic, salt and pepper for a marinade. 
  2. Pour over chicken and marinate for at least one hour. 
  3. Preheat oven to 375 degrees. 
  4. Spray a pan with olive oil and place chicken breasts with rosemary sprigs on top. 
  5. Bake for 25-30 minutes. 
  6. While chicken is baking, heat olive oil in a pan on medium-high heat. 
  7. Add Brussels sprouts and sun-dried tomatoes to the pan and stir often. 
  8. Serve with sliced tomatoes and enjoy. 



Rosemary Dijon Pork Chops


This one is on our regular rotation for sure! We planted a rosemary bush in our front yard that is doing insanely well so we look forward to dinners that involve Here are the details: 

Ingredients: 

  • 4-6 pork chops
  • 2 Tbs olive oil
  • 2 Tbs Dijon mustard
  • 1 Tbs chopped fresh rosemary 
  • 1 tsp sugar substitute
  • 1/4 garlic powder
  • 1/8 tsp salt
  • 1/8 tsp pepper 
Sides of your choice! 

Directions: 

  1. Whisk together all ingredients and pour over pork chops to marinate ahead of time. 
  2. Let rest 15 minutes before heating up the grill. 
  3. Grill 5-7 mins on each side or until they reach 145 degrees internally. 
  4. Let rest 5 mins before serving with the sides of your choice!
