Brussels sprouts...my how you have deceived me all these years! I am actually a major fan! Here's the quick and dirty on this healthy and fresh meal:
Ingredients:
- chicken breasts
- olive oil
- juice of 1/2 lemon
- 1 tsp minced garlic
- several fresh sprigs of rosemary
- 1/2 tsp salt
- 1/4 tsp pepper
- tomato, sliced
- 1 pound of Brussels sprouts, sliced in 1/2
- 1/2 cup of sun-dried tomatoes
Directions:
- Whisk together olive oil, lemon juice, garlic, salt and pepper for a marinade.
- Pour over chicken and marinate for at least one hour.
- Preheat oven to 375 degrees.
- Spray a pan with olive oil and place chicken breasts with rosemary sprigs on top.
- Bake for 25-30 minutes.
- While chicken is baking, heat olive oil in a pan on medium-high heat.
- Add Brussels sprouts and sun-dried tomatoes to the pan and stir often.
- Serve with sliced tomatoes and enjoy.
